I don’t know about you, but while I like to eat healthy, it can get very boring, very fast. Fruits and veggies tend can be rather bland if you don’t know how to cook or prepare them. Take salads for example. Simple, easy to make, and yet, what can you really do with lettuce? Sometimes I feel if you’ve eaten one salad, you’ve eaten them all. Plus, there are some with nothing to them that leave you feeling hungry 20 minutes later.
Today, however, I’m going to show you that you can add some pizzazz to your healthy meals. Personally, I try to eat a salad as a meal three or four times a week. So I’ve tried a lot of different combinations with fruits, vegetables, nuts, cheeses, and meats – not to mention, salad dressing.
Here’s a great salad recipe that I created with some inspiration from Panera Bread’s Fuji Apple Chicken Salad:
2 cups bib lettuce
½ apple, diced
¼ red onion, sliced
3oz grilled chicken breast, sliced
2 Tablespoons blue cheese, crumbled
2 Tablespoons toasted pecans, whole or chopped
2 Tablespoons white balsamic dressing
The apples give this salad enough tang and crunch to make it feel like you are eating more than just lettuce, while the chicken and nuts give you protein that will make you feel fuller longer. The cheese gives an additional tang as well as a creaminess that ties everything together to make a great meal.
